1 cup whole milk cottage cheese

¼ cup unsweetened almond milk (or heavy cream)

2 tbsp unsalted butter

3 cloves fresh garlic (finely minced)

1 cup fresh Parmesan cheese (grated off the block)

⅛ tsp ground nutmeg

¼ tsp coarse sea salt

¼ tsp freshly cracked black pepper

Instructions
 

Add cottage cheese and almond milk to a high-speed blender. Blend on high for 60 to 90 seconds until silky smooth with zero curds remaining.

    Melt butter in a skillet over medium-low heat. Add minced garlic and sauté for 1 to 2 minutes until fragrant and golden.

      Reduce heat to low. Pour in the blended cottage cheese cream and whisk for 2 minutes until warmed through.

        Slowly whisk in freshly grated Parmesan cheese, nutmeg, salt, and pepper until the sauce turns smooth and glossy.

          Remove from heat immediately and toss with warm low-carb noodles or vegetables.
