3 medium fresh zucchinis (shredded; approx. 1 lb)

1 tsp coarse sea salt (for sweating water)

2 large eggs (beaten)

¼ cup crumbled feta cheese

¼ cup shredded mozzarella cheese

½ cup superfine blanched almond flour

2 cloves garlic (minced)

2 scallions (finely chopped)

¼ cup fresh parsley (finely chopped)

¼ tsp black pepper

¼ tsp garlic powder

¼ tsp chili powder

2 tbsp avocado oil or olive oil (for pan frying)

Instructions
 

Grate zucchinis finely into a bowl. Toss with 1 tsp sea salt and rest for 10 minutes to sweat out internal water.

    Wrap zucchini in a clean towel and squeeze tightly over the sink until no more water drains out.

      Whisk eggs, cheeses, garlic, scallions, parsley, and seasonings together. Stir in the dried zucchini, then fold in almond flour until a cohesive mix forms.

        Heat oil in a skillet over medium-high heat. Scoop 1/4-cup portions into the hot oil and flatten into patties. Cook 3 to 4 minutes per side until deep golden and crispy.

          Transfer onto paper towels briefly, then serve hot with sour cream or tzatziki.
