Ingredients
  

6 large eggs

2 tbsp olive oil

1 medium onion, diced

3 garlic cloves, minced

2 bell peppers, diced

1 can (14 oz) chopped tomatoes

1 tsp paprika

1 tsp cumin

Salt, to taste

Fresh parsley, for garnish

Instructions
 

Heat olive oil in a skillet over medium heat.

    Sauté onion for 3–4 mins until softened. Add garlic, cook 30 secs.

      Stir in bell peppers, cook 5–6 mins until tender.

        Add paprika, cumin, and tomatoes. Simmer 8–10 mins until thickened.

          Make small wells in sauce, gently crack eggs into each.

            Cover and cook 5–7 mins, until eggs reach desired doneness.

              Garnish with parsley and serve hot.
