Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
In a bowl, combine almond flour, mozzarella cheese, egg, olive oil, salt, garlic powder, and herbs. Mix until dough forms.
Place dough between two parchment sheets and roll thin (about ⅛ inch).
Use a knife or pizza cutter to cut into squares or desired shapes.
Use a fork to poke holes in each cracker.
Transfer to tray and bake for 12–15 minutes until golden brown.
Let crackers cool completely to become crispy.
Bake additional 2–3 minutes if needed.
