Ingredients
  

2 medium zucchini, sliced lengthwise (noodles)

1 lb (450g) ground beef

2 tablespoons olive oil

3 cloves garlic, minced

2 cups low-carb tomato sauce

1 cup ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

½ cup grated parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Instructions
 

Prepare Zucchini: Slice zucchini thinly lengthwise. Sprinkle salt and let sit 10 minutes. Pat dry to remove moisture.

    Cook Meat Sauce: Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Add garlic and sauté until fragrant. Stir in tomato sauce and Italian seasoning. Simmer 8–10 minutes.

      Make Cheese Mixture: In a bowl, mix ricotta, egg, parmesan, salt, and pepper until smooth.

        Preheat Oven: Preheat to 375°F (190°C). Grease a baking dish lightly.

          Layer Lasagna:

            Spread meat sauce on bottom

              Add zucchini slices

                Spread ricotta mixture

                  Sprinkle mozzarella

                    Repeat layers

                      Bake: Cover with foil and bake 25 minutes. Remove foil and bake another 20 minutes until bubbly and golden.

                        Rest & Serve: Let rest 10–15 minutes before slicing for best texture.

                          Notes

                          Always remove excess moisture from zucchini to avoid watery lasagna
                          Use full-fat cheese for best keto macros and flavor
                          Let lasagna rest before cutting to hold layers properly
                          Add spinach or mushrooms for extra nutrients
                          Can substitute zucchini with eggplant or keto noodles
