Ingredients

1 lb fully cooked chicken breast (chopped into 1-inch cubes)

12 oz fresh broccoli florets (cut into small pieces)

½ cup low-sugar marinara sauce

¾ cup shredded mozzarella cheese

⅓ cup finely grated parmesan cheese

1 tsp dried Italian seasoning

½ tsp garlic powder

Salt and black pepper (to taste)

Avocado oil spray (for the top)

Instructions

In a medium mixing bowl, combine your cubed cooked chicken and small fresh broccoli florets. Sprinkle your dried Italian seasonings, garlic powder, salt, and black pepper evenly across the dry ingredients.

Pour the ½ cup of low-sugar marinara sauce straight into the bowl. Use a large spoon to toss the mixture thoroughly for 30 seconds until every piece of chicken and broccoli is evenly coated in the sauce.

Line the bottom of your air fryer basket with parchment paper. Dump the saucy chicken and broccoli mixture inside and press it down with your spoon into a single, flat, completely uniform layer across the bottom.

Scatter the shredded mozzarella cheese evenly over the top of the entire mixture. Dust the grated parmesan cheese uniformly over the mozzarella layer. Finish with one quick, light mist of avocado oil spray over the cheese.

Slide the basket into the machine. Air fry at 375°F (190°C) for 10 minutes. Check the basket around the 8-minute mark—you are looking for a fully melted cheese blanket with a deep, golden-brown crispy crust.

Pull the basket out of the air fryer and let the dish rest undisturbed inside the warm pan for 2 full minutes. This locks the sauce structure together cleanly. Scoop onto plates and serve hot.

              Notes

Chop Broccoli Small: Ensure your fresh broccoli florets are chopped into small, bite-sized pieces. Large chunks will remain too raw and tough by the time the top cheese layer is fully melted and browned.
The 2-Minute Rest Trick: Never skip the short resting phase at the very end! Letting the dish sit for 120 seconds allows the tomato juices to bind with the cheese, stopping the sauce from running all over your plate.
Freshly Grate the Parmesan: Avoid standard cellulose-coated shaker cheeses. Freshly grated parmesan from a real block contains natural dairy fats that melt smoothly and form that authentic, crunchy Italian-style top crust.
Raw Meat Alternative: If starting with raw chicken breasts, simply cube and season them, then air fry solo at 375°F (190°C) for 8 to 10 minutes before adding the broccoli, sauce, and cheese layers for the final stretch.
Reheat in the Basket: Avoid the microwave for leftover portions. Pop your cold leftovers back into the air fryer basket at 350°F for 3 minutes to instantly revive that crunchy cheese crust without making the chicken rubbery.
